You should try and base your negotiations around market values for the role and unless you have some others in the org that you can talk to it about probably the best way would be to see the kinds of offerings on job websites where your experience and qualifications line up and then use dollar figures rather than percentages.
As for the negotiation for X% increase each year I’ve personally never heard of someone doing that but you probably would want to negotiate more than 5% each year anyway. Locking in 5% now might be shooting yourself in the foot but that’s again going to depend on what the market is like for your role so it’s hard to say if that’s a good decision or not.
