Go and fight that ticket. Bring your “last” paycheck as proof you were an employee at the start of the day. Sounds like the boss called and waited till the Sheriff was there to fire you, aka entrapment. 🤷

What’s the location? The sheriff must be his buddies or wanting free coffees. In CA the city police are well trained so they are woker than anybody. Unless the manager gave you clear instructions with witnessrs to get out immediately and you refuse, in no way you are trespassing.
It’s worthwhile to drop down and remember all the details. If they did anything wrong, many lawyers are are happy to sue them for $50,000, or the limit to keep it in the state court. If a lawyer takes your case it’s a sure win. You keep 2/3 of that.
