Public drinking is not illegal *per se* in England and Wales. However, local authorities have the power to make Public Space Protection Orders over areas within their authority, and breach of such an order is a criminal offence. The Orders can say practically whatever the Council want it to say, and I’ve seen lots of them used to prohibit drinking in public.
I would need to know firstly whether there was a PSPO in place, and secondly the precise activity it prohibits, to ascertain whether or not you’d committed an offence by breaching it.
A “public place” can (and ordinarily does) mean any place to which the public at large has access – private car parks can be “public places”. But if you were trespassing, that does rather suggest that the officers thought that the car park was not open to the public at large – so yes, it may well be a contradiction to accuse you both of breaching a PSPO and trespassing at the same time.

If I enter your house through an open window and stand in your bedroom doorway, I’m already trespassing, even if you’re still asleep and haven’t asked me to leave yet. If the pub was closed, you probably were trespassing from the moment you entered its grounds.
